Like the iPhone, the Apple Watch comes bundled with a timer that allows you to set timers for up to 24 hours. Unlike the iPhone, the Timer application is its own app on the Apple Watch, instead of being bundled in with the Clock app.

How to set a timer via Siri
The easiest and perhaps fastest way to set a timer on the Apple watch is via Siri. Just invoke Siri and say something like “set a timer for five minutes.” Once you do, you’ll be automatically taken to the Timer app with a time countdown from the amount of time you told Siri.
How to set a timer via the Timer app
Step 1: Launch the Timer app on Apple Watch
Step 2: Tap on the HR section and move the Digital Crown to your desired hour
Step 3: Tap the MIN section and move the Digital Crown to your desired minute
Step 4: Tap the Start button to commence the timer
Note that using by this method you max out to 11 hours and 59 minutes. To add additional hours, Force Touch the timer interface and select the 0-24 hours option. By doing this, you can max out at 23 hours and 59 minutes.
How to add a timer to your watch face
You can use complications on watch faces that support them in order to add a timer to the watch face. The following faces are capable of featuring a timer complication:
