One thing that always stood out to me as popular in the early days of jailbreaking was being able to record your taps on your screen as you recorded your display. I can recall this being stock functionality in a certain screen recording application by former jailbreak tweak developer Ryan Petrich, and when Apple finally brought screen recording to the native experience, they never thought to add such a feature out of the box.
